Potato Cinnamon Rolls- my favorite!



This is my quick and easier method for my favorite recipe of cinnamon rolls-
to me, they are "just right".

3/4 cup sugar
3/4 cup hot mashed potatoes
1 1/2 cups warm water
2 packages yeast

mix these ingredients together and let the yeast work for about 10 minutes

1/2 cup butter or margarine, softened
2 eggs
2 tsp. salt
6 1/2 cups all-purpose flour

Add these ingredients and mix the flour in a cup at a time, knead for about 5 minutes or until you're tired of it:)
Roll dough out on floured counter top, slather with softened butter, sprinkle on a generous amount of brown sugar and then a couple tablespoons of cinnamon.  (Here is the recipe's version, if you're one for measuring):

Filling:

1 1/3 cups packed brown sugar
1/2 tsp. cinnamon
2 Tbl. butter or margarine, softened

Cut in about 1/2 inch slices and place in greased pan.  (I use a large cookie sheet with sides).   Let rise for about 15-20 minutes, while oven is preheating.  Bake at 300 degrees until golden brown (about 20 min?)

While baking, make the frosting-put

1/4 cup butter softened-mix, then add
2 Tbl. milk
2 cups powdered sugar
1 Tbl. vanilla

in mixer bowl and beat for a couple of minutes, until soft and smooth.  Add more powdered sugar if needed.  Slather on hot cinnamon rolls.   Yummers!
