My sister-in-law Pam gave me this bread recipe and I have used it for years because it always turns out for me (except when I start adding weird stuff). I love the way it tastes and rises and how quick it is to make. It works just as well for me when I use 100% whole wheat even though it is a white bread recipe. Here goes:
11 cups flour
6 Tbl. dry milk powder
3 Tbl. yeast
1 Tbl. salt
4 cups hot tap water
1/2 cup margerine
----------------------------------------------
Mix 4 cups flour, sugar, dry milk, yeast, and salt in large bowl or mixer. Add hottest tap water and margerine. Mix on slow.
Mix for 3 minutes and then slowly add the rest of the flour. When dough is tight, or sticks in a ball to the dough hook, it is done and ready to shape into 3 loaves. Place loaves in greased bread pans and preheat oven. For mine, when the oven is done preheating (about 7 minutes) it is ready to go in. Don't let it double in size or it be to big and fall in the oven, leaving a doughy center. Bake at 350 for 25 minutes or until golden brown. These times are for my kitchen and oven, your might be a little different. Have fun! And don't forget to make some freezer jam to spread on top:)
If you have two ovens and want to make some for a large family that will last a little while, here is the
recipe x 4 that we use:
44 cups flour
1 1/2 cups sugar
1 1/3 cups dry milk
3/4 cup yeast
1/4 cup salt
16 cups (1 gallon) hot water
2 cups margerine
